From Strasbourg to Taipei – A Shared Passion
The story of Le Flam
The story began in 2014, when two Alsatian brothers, David and Florent, reunited in Taiwan after following very different paths.
Florent, a passionate chef, brought his culinary expertise, while David had a deep understanding of Asian markets, business development, and was fluent in Mandarin. Together, they decided to pursue a common dream: open a restaurant.
But one big question remained: What kind of food would they serve?
As proud Alsatians, the answer came naturally. They chose to highlight one of their region’s most iconic dishes: the flammekueche – or tarte flambée.
This thin, crispy flatbread topped with cream, onions and bacon is delicious, comforting, and perfect for sharing with friends and family.
And so, Le Flam was born – a restaurant entirely dedicated to tarte flambée, which officially opened its doors on October 12, 2015, in Shilin District, Taipei.
Since then, the journey has continued. Over the years, tens of thousands of flammekueche have been shared with guests from all over the world.
Each tart served has been a moment of discovery and conviviality.

First months of activity
A New Chapter: Flam&Go
Building on this success, we’re now taking the next step with a brand-new venture:
Flam&Go – a range of pre-baked, frozen tarte flambée, ready to enjoy at home.
Our mission is simple: to make flammekueche available to everyone – across Taipei and, soon, across all of Taiwan.
Each tart is made using the same authentic Alsatian recipe we’ve served at Le Flam for nearly a decade.
It’s a tasty, convenient, and quick-to-prepare product that you can always keep in your freezer for any occasion – an appetizer with friends, a cozy dinner, or a wine night at home.
Whether you’re sharing it as a snack or enjoying it as a full meal, flammekueche is always the perfect choice.
